What is the difference between high oleic and the ordinary (linoleic) sunflower oil?

The difference between high-oleic and the ordinary sunflower oil is mainly in the composition of fatty acids, which affects their health properties, cooking stability and shelf life.


1. High-oleic sunflower oil :

  • Fatty acid composition : High oleic oil contains high levels of oleic acid (a monounsaturated fatty acid), and its concentration can reach up to 80-90%. Oleic acid is known for its cardiovascular health benefits.

  • Health benefits : Monounsaturated fats, such as oleic acid, help lower "bad" LDL cholesterol and increase "good" HDL cholesterol, which is good for the heart. In addition, these fats have anti-inflammatory properties.

  • Smoke point : High oleic oil has a high smoke point (around 220–230°C), making it suitable for high temperature cooking such as frying and baking.

  • Shelf life : Because monounsaturated fats are more resistant to oxidation, high oleic oil is more stable and has a longer shelf life.

  • Applications : Due to its stability and neutral taste, it is preferred for industrial food production as well as for home cooking.


2. Ordinary sunflower oil (also called linoleic sunflower oil ):

  • Fatty acid composition : Common sunflower oil is rich in linoleic acid (a polyunsaturated fatty acid), which makes up about 60-75% of the fatty acids. Linoleic acid is an omega-6 fatty acid that is essential for the human body.

  • Health benefits : Omega-6 fats, such as linoleic acid, are necessary for the proper functioning of cells and the immune system.

  • Smoke point : Regular sunflower oil has a lower smoke point (around 160–180°C), which makes it less suitable for cooking at high temperatures, but is good for salads and dressings.

  • Shelf life : Polyunsaturated fats, like those in regular sunflower oil, are more unstable and oxidize easily, meaning the oil has a shorter shelf life and is more prone to spoilage.

  • Applications : Common sunflower oil is used for cold dishes, dressings and cooking at lower temperatures.


Main differences:

  • Fatty acid composition : High-oleic oil contains mostly oleic acid (monounsaturated), while regular oil is rich in linoleic acid (polyunsaturated).

  • Health benefits : High oleic oil is healthier for the heart because monounsaturated fats have a beneficial effect on cholesterol and are more stable. Linoleic oil (regular) is also healthy, but requires a better balance of omega-6 and omega-3 fatty acids.

  • Heat resistance : High oleic oil is more resistant to high temperatures, making it more suitable for frying and baking, while regular sunflower oil is more suitable for cold dishes and cooking at a lower temperature.

  • Shelf life : High oleic oil has a longer shelf life due to its stability, while regular oil oxidizes more quickly.


Which one to choose?

If you're looking for a high-heat cooking oil or a product with a longer shelf life and better cardiovascular benefits, high-oleic sunflower oil is the better choice. For salads, dressings and cold dishes, ordinary sunflower oil is also suitable, but it has a shorter shelf life and should be used more quickly.
